This Easy Burrito Recipe is Healthy Fast Food Personified

Most people identify burritos as junk or fast food which is highly processed and packed with unhealthy cholesterol and fats. However, with the correct recipe and quantity in the fillings, burritos can be transformed into one of the best healthy fast food options and are extremely delicious, fun, and filling at the same time. These healthy fast-food versions are highly versatile and could be made for breakfast, lunch, and dinner.

Here’s one healthy and tasty burrito recipe.

The Chicken Black Bean Guacamole-Hummus Burrito

Ingredients:

  1. 1 ten inch tortilla of choice- preferably low-fat whole wheat.

  2. ⅓ can of Black beans

  3. 1 tablespoon of hummus

  4. 2 tablespoon of guacamole

  5. A handful of Grilled Vegetables- cherry tomatoes, capsicum, carrots, and mushrooms.

  6. 2-3 large Iceberg lettuce leaves

  7. ¼ cup of Shredded Chicken Breast

  8. ¼ cup of brown rice

  9. 1 teaspoon of lime juice

  10. A handful of fresh cilantro

  11. 1 tablespoon of fresh Salsa or salsa sauce.

  12. 2 bay leaves.

  13. A pinch of chopped garlic, oregano, cumin, and pepper.

Instructions:

For the Fresh Cilantro Rice

  1. Boil the rice in water.

  2. Add some salt and 2 bay leaves.

  3. Once the rice is cooked, drain out the access water.

  4. When adding cilantro and lime juice to it.

For the Black Bean Seasoning

  1. Boil the black beans in a vessel.

  2. Add a pinch of chopped garlic, oregano, cumin, and pepper.

  3. Place it in medium heat for 5 minutes.

For the filling

  1. Place the 10-inch tortilla in an assembling plate.

  2. Before placing the following make sure to leave a good few inches, in order to wrap the burrito.

  3. Ideally, place the filling in the center, in the shape of a rectangle, as much as possible.

IN ORDER:

  1. Add the desired amount of black beans, shredded, and cilantro rice.

  2. Then add the hummus and guacamole.

  3. Add the grilled vegetables and salsa.

  4. Lastly, add the lettuce on the top.

  5. Then fold the burrito, first on one long side in, followed by two shorter sides and then the longer one.

  6. Optional: Add some vegetable oil on top of the burrito wrap and place it in a griller for a few minutes.
